If you’re a home cheesemaker, dairy farmer, chef or cheese enthusiast who would like to know what’s involved in making cheese on a commercial scale, this course could be for you.
The 3-day course will run from Wednesday 20th - Friday 22nd July, 2016, at the National Centre for Dairy Education (NCDE) in Werribee, Victoria. It will cover the basics of cheesemaking, including milk quality, pasteurisation, starter cultures, rennet types and maturation, and will have a strong emphasis on sanitation and hygiene. Cheese will be made every day in the pilot-scale facility at the NDCE.
The course will be presented by Carole Willman, who was formerly the owner of Cheeselinks, and is an experienced cheesemaker and educator.
